Mincemeat
1 cup chopped apples 3 cups currants
3 cups sultanas 2 tsp orange peel chopped
1 ½ cups of walnuts 1 ½ tsp cinnamon
3 level tbs miso (soybean paste) 1 tsp mixed spice
2 tsp lemon peel – chopped ½ tsp each nutmeg and mace
1 tbs lemon juice
Combine apples, sultanas and finely chopped walnuts in a heavy pot. Cover with water, bring to the boil and simmer for ½ an hour. Mash the miso with a little of the juice from the pot and add along with the peel and spices. Cook for 15 minutes longer. Add currants and lemon juice and turn off heat.
Let the mince sit for a day or two before using. Do not try to keep too long unless refridgerated.
Pastry for Mince pies(approx. 15 pies)
2/3 a cup of boiling water
1/3 a cup of vegetable oil
¼ tsp sea salt
½ a cup of oat flakes(oats)
1 ¾ cups of wholewheat pastry flour or fine bread flour (approx)
Boil water, add oil and beat or whisk till milky white. Add salt, then oatflakes and enough flour to make a soft warm , easily rollable dough. Use whilst still warm.
Refinements:- add cinnamon or roasted sesame seeds to flour. Instead of water use apple juice. Add vanilla or orange juice to liquid
